Happy Thanksgiving Everyone!

For your Thanksgiving TREAT…  I am sharing a favorite recipe for your Holiday enjoyment!

Eggnog Pie

Another favorite from my mother’s recipe collection…tried and true….a great recipe to WOW your guests at your Holiday celebration!

1 Envelope Unflavored Gelatin
¼ C Milk
1 ½ C Commercial Dairy Eggnog
3 Eggs, separated
½ C Sugar, divided
3 T Rum
1 Baked Pie Shell/Crust or Graham Shell
½ C Whipping Cream
1 T Sugar

Combine gelatin and milk in small bowl; let stand 10 minutes.  Heat eggnog, not directly or it will scorch, so it’s best to use a double boiler.  Beat egg yolks and ¼ C sugar until it thickens.  Gradually stir ½ C hot eggnog into the yolks; add remaining eggnog, constantly stirring…  Cook in (top part) double boiler until it thickens (about 10 min), stirring frequently.  Remove from heat, add gelatin mixture, combine and stir until dissolved.  Cool 30 min. and stir in Rum.  Chill until it becomes the consistency of unbeaten egg whites.  Beat your 3 egg whites until foamy.  Add remaining sugar, a tablespoon at the time, beating until soft peaks form.  Fold into mixture and pour into cooled pie shell.  Beat whipping cream separately, add last Tablespoon of sugar and garnish  top of pie, sprinkle with Nutmeg. Refrigerate and serve cold. (Helpful Hint: If you have to travel with this pie, add whip cream and nutmeg after you get there to make the presentation nicer!)
